A new culinary gem has landed in Central. Meet Shellter, a Japanese teppanyaki restaurant that spotlights crustacean delights. Think abalone, lobster, crab and shellfish, all sizzling on the grill in front of you, transformed into inventive omakase creations that put the ocean’s finest and freshest on centre stage.

The name is a clever play on ‘shell’ and ‘shelter’, and the space lives up to it: a sleek, minimalist hideaway where deep‑sea hues meet Japanese design. Pull up a seat at the open teppan bar, watch the chefs at work under custom lighting, and soak in the ritualistic vibe.

At the helm of Shellter is Chef Ami Hamasaki, a seasoned teppanyaki master with more than two decades of experience. Having worked in Australia, Dubai, Hong Kong, Japan’s vibrant culinary scene and sharpened her skills around the globe, Ami brings a distinctive blend of traditional craftsmanship and modern creativity to Shellter, elevating crustacean‑focused omakase dining into an immersive performance.

Guests can expect signature dishes that balance precision and artistry, from lobster glazed with urchin sauce to delicately grilled abalone and steamed oysters, each plate reflecting Ami’s dedication to perfection.
