Famous for his boisterous personality and penchant for (jokingly) insulting and berating his customers, Ali Usta is a Sirkeci institution, famous for his çiğ köfte, a paste made from bulgur wheat and spices, spread across flatbread and eaten with arugula, lettuce, tomato and lemon juice. His small stand is tucked away in a backstreet and is a favorite among hungry locals.
