Ramen Break Beats in Meguro is run by local DJ Takuro Yanase, who serves delicious bowls of shoyu ramen using fresh ingredients from Kyushu prefecture. The shop’s special broth is a mixture of five different soy sauces including Kitai shoyu from Fukuoka, white soy sauce and usukuchi (light) soy sauce, creating the perfect combination with its straight noodles made by Mikawaya Seimen. It’s served inside a bowl made of Koshiwara ware – Fukuoka’s famed style of pottery – for an extra touch of authenticity. First timers should go for a simple chashu ramen, shio ramen, or a wonton shoyu ramen, while adventurous eaters should opt for the smoky oyster and mushroom ramen.
